Sweet Corn Soup
From Alice Waters
Melt over medium heat
- 4 T (1/2 stick butter)
Add- 1 onion, diced
Cook until soft, without browning, about 15 min. Season with- salt
Shuck- 5 ears corn
Cut kernels from cobs. Add to cooked onions and cook 2-3 mins. Add- 1 quart water
Bring to boil, then simmer until corn is done, about 5 min. Puree in small batches in blender. more from Wendy's kitchen
