Pistachio Orange Biscotti
- 2 c pistachios or other nuts
- 2 c + 2T flour
- 1 c sugar
- 1 1/2 t baking powder
- 1/2 t salt
- 1/4 c butter
- 2 large eggs
- 1 t vanilla
- orange zest
- 1/4 c orange juice
- 1 c chocolate chips (mini work best)
Cut butter into flour and sugar. Add nuts. In mixer, add eggs,
vanilla, to dry ingredients. Add orange zest and juice, chocolate
chips.
Form into two 14" logs. Bake at 350F for 25 minutes.
Slice, turn temperature down to 300 and bake 10 minutes.
