Makes 24.Cream Cheese Pastry Dough:
- 1 1/4 c all-purpose flour
- 1/3 c confectioners' sugar
- 1/4 t baking powder
- 1/8 t salt
- 1/2 c (1 stick) chilled butter
- 3 oz cream cheese, frozen and chunked
- 1 large egg yolk
- 1 t vanilla
Mix dry ingredients and butter in food processor to pie-crust texture. Add cream cheese, egg yolk, and vanilla. Refrigerate.
Line 24 greased miniature muffin cups with crust, prick bottoms. Bake for 10 min at 400; lower oven temp to 350 and bake 5-10 minutes longer. Cool.
Lemon curd
- 1 large egg
- 4 egg yolks
- 1 c + 2T granulated sugar
- 1/2 c freshly squeezed lemon juice
- 2 t lemon zest
- pinch of salt
- 6 T butter
Cook over medium heat, stirring constantly, until mixture thickens. Cool. Pipe into cooled pastry shells.
