Crispy Cookies
- Crispy Cookies
- 1 c butter
- 1 c sugar
- 1 c brown sugar
- 1 egg
- 1 cup salad oil
- 1 c rolled oats, regular
- 1 c crushed cornflakes (crush, then measure)
- 1/2 c shredded coconut
- 1/2 c chopped pecans or walnuts
- 3 1/2 c all-purpose flour
- 1 t baking soda
- 1 t salt
- 1 t vanilla extract
Preheat oven to 325F. Cream together butter and sugars. Add egg, then oil and vanilla. Mix well. Add oats, cornflake, coconut, nuts. Mix well. Add remaining ingredients. Mix well.
Form balls the size of small walnuts. Place on cookie sheet. Flatten with fork dipped in water. Bake 11-12 minutes. Cool on a wire rack before removing from the baking sheets.
Makes 9 dozen.
