Basic Biscotti

(adapted from the King Arthur Flour Cookie Companion)
  • 2 eggs
  • 2/3 c sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 c flour
    Beat eggs and sugar; add baking powder, salt, and vanilla. Beat in flour. Batter should be stiff. Roll into one long log.
    Bake for 25 minutes at 350. Remove from oven, let sit for 5-10 minutes. Mist with water before slicing and separating the slices. Return to oven at 325 for another 25 minutes.

    Variations
    Gingerbread

    • Replace sugar with 2/3 c brown sugar
    • add 1 t cinnamon, 4 t powdered ginger, and 1 c crystallized ginger
    Coffee hazelnut
    • add 1 c chopped toasted hazelnuts / almonds
    • 1 T coffee granules
    • hazelnut oil
    • 1/2 c chocolate chips
