Watermelon Feta Salad
Adapted from Nigella Lawson. Great for a summer barbecue.
Slice red onion longitudinally into fine slivers. Steep slivers in lime juice until pink.
Cut watermelon and feta into bite-sized pieces and put in bowl. Add parsley leaves and chopped mint. Add onions, juices, oil, olives.
Toss gently (with hands, so as not to crush the watermelon). Add black pepper and more lime juice, if necessary.
