Watermelon Feta Salad

Adapted from Nigella Lawson. Great for a summer barbecue.

    (proportions are approximate)
  • 1/2 Watermelon, de-seeded and cut into bite-sized cubes
  • Feta cheese, about 8 oz, cubed
  • Bunch of mint, chopped
  • Bunch of flat leaf parsley
  • 1 small red onion
  • Juice of 2-4 limes
  • 3-4 tablespoons extra virgin olive oil
  • 1/2 C calamata olives, halved
  • Black pepper, to taste

Slice red onion longitudinally into fine slivers. Steep slivers in lime juice until pink.

Cut watermelon and feta into bite-sized pieces and put in bowl. Add parsley leaves and chopped mint. Add onions, juices, oil, olives.

Toss gently (with hands, so as not to crush the watermelon). Add black pepper and more lime juice, if necessary.
