Lemon Veal Scallopine

My brother's favorite dish. (Serves 6-8 unless he's at the table.)
  • 2 pounds veal cutlets
  • 1/2 c all-purpose flour
  • 1 - 2 cloves garlic, pressed
  • 1/2 c butter
  • 6 lemon slices
  • 1 beef bouillon cube
  • 1/2 c hot water
  • 2 T lemon juice
  • 2 T chopped fresh parsley
Preheat oven to 350. Pound veal.
Mix flour and garlic, coat meat.
Melt butter in skillet; brown meat over medium heat.
Place meat in ungreased 13x9 baking dish, top with lemon slices, cover with foil and refrigerate.
Dissolve bouillon in water and add lemon juice. Pour over meat. Sprinkle with parsley.
Cover with foil and bake 25-30 min.
