Sweet Corn Soup

    Melt over medium heat
  • 4 T (1/2 stick butter)
    Add
  • 1 onion, diced
    Cook until soft, without browning, about 15 min. Season with
  • salt
    Shuck
  • 5 ears corn
    Cut kernels from cobs. Add to cooked onions and cook 2-3 mins. Add
  • 1 quart water
    Bring to boil, then simmer until corn is done, about 5 min. Puree in small batches in blender.
