Spinach Cottage Cheese Casserole

  • 1 pkg frozen spinach (10 ounce) thawed & squeezed dry
  • 2 c small-curd collage cheese
  • 3 eggs
  • 3 T all-purpose flour
  • 1 C shredded sharp cheddar cheese
  • 1 small onion, chopped
  • salt, to taste

Thaw spinach and press most of the liquid out. Put cottage cheese in a bowl. Stir in unbeaten eggs. Add flour, cheese and salt to taste; mix thoroughly. Saute onions in margarine until wilted, add. Gently fold in spinach.

Pour into a greased 1 1/2-quart baking dish and bake at 350 degrees for 1 hour.
