Silver Palate Meringues

  • 6 egg whites
  • 1/8 t cream of tartar
  • 2 c sugar
  • 1 t vanilla
  • 1 T vinegar
    Beat room-temperature egg whites until foamy. Add cream of tartar and beat until stiff. Add remaining ingredients and beat about 10 minutes until very stiff and shiny.
    Preheat oven to 275. Drop meringues onto parchment, bake until crisp. Turn off oven and leave meringues overnight.
