Chocolate Craisin Cookies


    Adapted from Metropolitan Bakery Chocolate Chip and Dried Cherry Cookies

    • 1 c rolled oats, food processed into flour
    • 3 c all-purpose flour
    • 1 3/4 t baking powder
    • 1 1/2 t baking soda
    • 2 T cocoa
    • 1 1/4 t kosher salt
    • 1 1/2 c unsalted butter
    • 1 1/2 c granulated sugar
    • 1 c light brown sugar
    • 1/3 c honey
    • 3 eggs
    • 1 1/2 t vanilla
    • 3 c bittersweet chocolate chunks (or chocolate chips)
    • 1 1/4 c craisins (or dried cherries)
    • kosher salt for sprinkling on top

      Cream butter and sugars. Add honey, eggs, and vanilla. Mix.
      Grind oats into flour in food processor. Mix with other dry ingredients, and add to egg mixture.

      Add chocolate and craisins/cherries.

      Use ice-cream scoop to make balls. Refrigerate overnight before baking.

      Preheat oven to 350F. Flatten balls on parchment/silicone liner. Sprinkle lightly with coarse salt. Bake for 15-18 minutes.
