Cherry Chocolate Chip Oatmeal Cookies


    Adapted from Bon Appetit, Feb. 1998

    • 1 1/4 stick unsalted butter, room temperature
    • 1/2 c sugar
    • 1/2 c (packed) dark brown sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 t almond extract
    • 1 c all-purpose flour
    • 1/2 t baking soda
    • 1/4 t salt
    • 1 c oats
    • 1 1/2 c semisweet chocolate chips
    • 1 c dried tart cherries
    • 1/2 c slivered almonds, toasted

    Preheat oven to 325F.

    Cream butter and sugars. Add egg and extracts, mix. Combine flour, baking soda, and salt, then add. Add oats, chips, cherries, and almonds.

    Drop the batter by tablespoons onto baking sheets and bake 15-18 minutes, rotating once. Makes 3 dozen.
