Apple Crostata

Crust (2 crusts)
2 c flour
1/4 c granulated sugar
1/2 tsp Kosher salt
1/2 pound unsalted butter, cut

Cut together butter, sugar, flour. Add 1/4 c ice water.
Divide in half, chill.
Roll single crust into 11" round. Transfer to parchment-covered baking sheet.

Filling
1 1/2 lb apples, peeled and chunked
1/4 t grated orange zest
1/4 c flour
1/4 c sugar
1/4 t kosher salt
1/4 t ground cinnamon
1/8 t ground allspice
4 T unsalted butter

Toss apples with orange zest. Combine all remaining ingredients into a streusel.
Heap apples on crust. Top with streusel. Fold crust up around apples.

Bake at 450 for 20-25 minutes, until crust is golden.
